1 bunch asparagus
2 tomatoes
2 pickles
1 sweet pepper
8 slices toast
6 large eggs
1/4 cup milk
2/3 cup cheddar cheese
2 tbsp ricotta cheese
5 strips Schneider's Country Naturals Bacon
1/4 cup onion


Preheat oven to 350 degrees. Grease 9 inch glass pie dish and set aside. Cook bacon on medium heat in a small pan until crisp. Remove bacon and add onion to rendered fat and sauté for 3-4 minutes or until soft. In a bowl whisk eggs with milk and add in ricotta cheese. Season with salt and pepper. Cut up bacon into small pieces and add to egg mixture. Pour mixture into pie dish and sprinkle cheddar cheese over top and bake on high for 25 minutes or until cheese is bubbly and golden.
In the last 5 minutes add oil to a medium pan and add asparagus., grilling until tender.
Cut into 4 pieces. Serve each piece between two slices of buttered whole wheat or grain toast and sliced tomato. Garnish with pickle and sweet peppers.
