This sandwich is something I created when I had an overflow of ripe avocados in my house and ever since I haven't stopped making it. It has become a staple in my diet and one of my most favourite flavour combinations around. The gooey yolk, buttery avocado and salty bacon combine beautifully. It is super quick, easy, healthy and you will NOT want it to end!!

Ingredients

1 Avocado
1 Dempsters English Muffin
1 tsp Olive Oil
1 tsp Sea Salt
2 pieces of Cooked Bacon
1 Egg

Directions

Turn two burners on medium heat, and place two separate frying pans on top of both of them.
Cut Dempster's English Muffin in half, drizzle with the olive oil and sea salt and put it in a toaster oven.
Place bacon in frying pan, and start cooking until desired crispyness.
While bacon is cooking, slice avocado and sprinkle with more of the sea salt and mash it up while keeping it in its shell.
At this time the bacon should be mostly cooked-- crack your one egg in the other (greased) frying pan and cook till desired doneness. (I flip mine once and partially cook the yolk)
Take english muffin out of toaster, and put the mashed avocado on the bottom slice.
Top with your fried egg and cooked bacon.
Place other half of the english muffin on top and ENJOY!!!!!!
