Chicken sandwich lovers rejoice! This crispy, crunchy and spicy sandwich will delight!

Ingredients

1 Pkg Maple Leaf Prime® split chicken breast
Marinade:
2 cups (500 mL) butter milk
1 1/2 tbsp (22.5 mL) ground mustard
1 tbsp (15 mL) onion powder
1 tbsp (15 mL) garlic powder
1 tsp (5 mL) cayenne
2 cups (500 mL) flour
1/2 cup (125 mL) potato starch
Vegetable oil
Breading:
1 cup (250 mL) flour
1/3 cup (75 mL) potato starch
1 tbsp (15 mL) garlic powder
1 tbsp (15 mL) onion powder
1/2 tbsp (7.5 mL) mustard powder
1 tsp (5 mL) paprika
Vegetable oil
Salt
Pepper
8 slices thick cut bread, toasted
1 jalapeno, seeded and sliced
1/2 small red onion, thinly sliced
1 large tomato, sliced
1 1/2 cup (375 mL) mayonnaise
1/3 cup (75 mL) sriracha sauce
1/3 cup (75 mL) honey
1 large avocado, pitted and sliced

Directions

PLACE chicken in a large ziplock bag with butter milk, dried mustard, garlic and onion powder, paprika, poultry seasoning, cayenne and salt and pepper.

REFRIGERATE for 2 to 24 hours.

SIFT flour, potato starch, and seasonings.

DREDGE chicken into seasoned flour.

HEAT enough oil in a large deep skillet to 375 degrees.

FRY chicken in batches or until golden brown and an internal temperature of 165 is reached.

REMOVE onto a paper towel lined plate.

IN a small bowl combine sriracha and mayonnaise.

ASSEMBLE sandwiches by dividing mayonnaise and spreading on bottom toast.

LAYER sliced avocado, tomato and onion.

PLACE fried chicken on top.

DRIZZLE with honey and garnish with jalapeno.

SERVE immediately.

Notes

Serve with curly fries.
