This is a fresh and delicious salad using some bright spring flavours, asparagus, peas and fresh dill. A lovely creamy dressing with tender ham and Cheddar cheese.
|1/2 lb||(225 g) Fusilli pasta|
|1 cup||(250 mL) Mayonnaise|
|1/2 cup||(125 mL) Dijon mustard|
|1 tbsp||(15 mL) Apple cider vinegar|
|1||Small orange pepper, diced|
|1 cup||(250 mL) Peas, blanched|
|1 cup||(250 mL) Thinly sliced radishes|
|1 1/2 cups||(375 mL) Asparagus, blanched and cut into ½” (1 cm) pieces|
|1 cup||(250 mL) Diced Cheddar cheese|
|2 cups||(500 mL) Diced Maple Leaf® Country Kitchen® Smoked Ham|
|1/4 cup||(60 mL) Chopped fresh dill|
BRING a large pot of salted water to a boil. Cook pasta according to package directions, about 9 minutes. Drain and rinse with cold water. Transfer to a large bowl.
MIX mayonnaise, mustard and cider vinegar in a small bowl. Set aside.
ADD all of the remaining ingredients to the pasta. Drizzle with dressing and toss to coat. Season to taste with salt and pepper and serve.
