About this Recipe

Simple and delicious.
I like using Raisin Bread, but any other breads can be used- from High Protein to Gluten Free.
Make ahead for a special breakfast and let the egg soak int ot the bread.
You can also make a lower fat version by using back bacon, layered on the bottom, and leaving off the topping, and using skim milk, or almond milk.

Ingredients

12 oz strips of bacon, grilled to be semi crisp
6 x-large eggs
1/3 cup milk or half and half
1/3 cup white sugar
1 tsp cinnamon ( liquid if available)
1/2 tsp vanilla
6 Slice of your favorite Dempsters bread
OPTIONAL TOPPING
1/2 cup Brown Sugar
1 tbsp cinnamon
1 tsp vanilla
1/4 cup butter

Directions

Spray or grease a 13 X 9 " Baking Pan.

Grill or microwave bacon until semi-crisp, and set on paper towels to drain.

In a mixing bowl, mix eggs, milk, sugar , vanilla, cinnamon with a mixer until slightly frothy. Set aside.
Slice bread diagonally.

In baking pan, criss cross bacon strips.
Place bread on top.
Pour egg mixture over, cover pan, and set aside for 1/2 hour. This can also be placed in fridge, and left overnight

When ready to bake, preheat oven to 350,
If using optional topping, mix brown sugar , vanilla and cinnamon. Grate butter into, and combine until mixture is crumbly ( frozen butter is easier to do this with)
Sprinkle over top in a random pattern.

Bake for 40-45 minutes, checking for the donenes syou prefer.
Serve with warm maple syrup,.

Notes

Varyby using differnt breads- from whole wheat to gluten free, and everything in between.
It's hard to mes sup this recipe.
You can use Canadian back bacon for a lower fat version, eand egg whites instead of whole eggs for a lower cholesteral version as well.

For a special presentation, try adding a soft-poached egg on top, sprinkled with bacon bits.
