|1 tbsp||Olive oil|
|1||Small onion, thinly sliced|
|1 tsp||Chopped fresh thyme|
|Salt & pepper|
|4||Slices Bon Matin Rustic Grains Bread|
|2-3 tbsp||Grainy mustard|
|3/4 cup||Grated Gruyere cheese|
|6-8||Slices roast beef|
|2 tbsp||Softened butter|
HEAT olive oil in a skillet over medium. Add onion, season with salt and pepper and cook, stirring occasionally for about 6 minutes. Stir in thyme and continue to cook for 10-12 minutes or until the onions are nicely caramelized. Add 1 tbsp (15 mL) of water to prevent onions from sticking if needed.
ASSEMBLE sandwiches by spreading each slice of bread with grainy mustard. Divide the cheese and roast beef between two slices of bread. Top with the onion mixture and the remaining bread. Butter the outside of the sandwiches. Grill for 4-5 minutes per side in a non-stick skillet over medium heat. Sandwiches should be golden brown and the cheese melted.
If you are in a hurry substitute onion jam for caramelized onions.
