The perfect dish for Mother’s Day brunch or better yet– breakfast in bed!
|1||Package Tenderflake® Tart Shells|
|2 tbsp||(30 mL) Olive oil|
|1||Onion, finely diced|
|Salt and pepper|
|1/4 cup||(60 mL) 18% Cream|
|1 tsp||(5 mL) Chopped fresh thyme|
|1 cup||(250 mL) Grated Gruyere cheese|
|Sprigs of fresh thyme|
PREHEAT oven to 375°F (190°C). Bake tart shells according to the package directions, about 8 minutes. Remove from oven and set aside.
HEAT oil in a skillet over medium. Add onion and cook, stirring occasionally for 9-10 minutes or until golden brown in colour. Season with salt and pepper. Remove from heat and allow to cool.
WHISK together eggs, cream and thyme in a measuring cup. Spoon a scant amount of caramelized onion into each tart shell. Pour egg mixture over top and sprinkle with grated cheese.
BAKE tarts in preheated oven for 10 minutes or until the quiche is set and pastry is golden. Garnish each tart with a sprig of fresh thyme and remaining onions.
SERVE warm or at room temperature.
Serve with candied bacon and fresh fruit for breakfast in bed!
