This spicy, flavor filled basting sauce keeps the chicken moist when grilling. Fresh chili kicks up the flavor in this simple recipe.
|1 cup||(250 mL) White vinegar|
|.5 tbsp||(7 mL) Coarse salt|
|.5 tsp||(2 mL) Black pepper|
|.5 tsp||(2 mL) Red hot pepper flakes|
|1||Small onion, diced|
|1||Red chili pepper, diced|
|1||Whole Maple Leaf Prime Naturally® Chicken|
PREHEAT BBQ to medium. Lightly coat grill with non- stick cooking spray.
COMBINE all ingredients except chicken in a small bowl. Set aside.
PLACE chicken breast side down on a cutting board. Using kitchen scissors, cut out the back bone, and discard it. Turn chicken over and press down to flatten it.
GRILL chicken breast side down until grill marks form and skin begins to crisp. Turn chicken over and brush generously with vinegar mixture. Cook chicken 20-30 minutes, basting occasionally, or until internal temperature reaches 185°F (85°C). Dispose of any unused basting liquid.
