Quadruple Fire Roasted Peppers, asparagus and gooey cheddar nestled in a beef burger, tucked into a pan toasted Dempsters Grain Tortilla. Easy, portable, great for Summer BBQ'ing! Who won't eat these veggies?
Tortillas make this dish a fun way to eat hamburgers!
Turn this simple dish into a comforting Delight.
|1||each jalapeno pepper, red pepper, poblano pepper, yellow pepper|
|1||green onion, cut into match stick pieces|
|4||spears asparagus, woody ends snapped|
|2 cups||shredded old cheddar|
|4||sprigs flat leaf parsley, chopped, stems included|
|1||clove garlic, minced|
|1/4 cup||Extra virgin olive oil + 1 tbsp extra|
|4||Dempster's Tortilla Wrap, Grain or Original|
On a preheated med. high heat BBQ, blacken the skins on all of the peppers. Turning to blacken and char the skin. Place on a platter when each vegetable is cooked.(They will cook at different speeds.)
Cool to the touch.
At the same time, grill the asparagus, turning to cook.
Begin to grill the burgers when the veggies are finished. Turning to cook until no pink juices appear. Cut into strips, cover to keep warm.
Using a sharp knife, scrape the charred skin off of the peppers. Seed and cut into strips, 1/4" thickness.
Mince the jalapeno(remove seeds if you want less heat).
Place all vegetables on a serving platter. Toss with 1/4 cup of oil, garlic, parsley, lemon and salt. Set aside.
Brush one side of each tortilla with remaining oil. Toast in a pan on med. heat, oil side down.
Add 1/4 of the cheddar so that it will begin to melt. Layer 1/4 of the assorted vegetables. Top with burger and some green onion.
Continue the steps for the remaining wraps.
Wrap tightly. Enjoy!
Vegetables can be roasted under the broiler or on a grill pan on stove element.
