This light and tasty salad is full of crunch, colour and flavor. It is a bite of spring in each mouthful. Juicy peaches, peppers and crisp vegetables are tossed with yogourt keeping this light and playful and ready in minutes.
Great for lunch or dinner
|400 g||Fully Cooked Sweet Thai Chili, MLP chicken strips, diced|
|1||peach or nectarine, washed, depitted, diced|
|1/2||English cucumber, washed, cut into coins|
|1 Pkg||grape tomatoes, washed|
|1 cup||shredded nappa cabbage|
|3||handfuls of your favourite lettuce, washed|
|1/2||orange pepper, seeded, diced|
|1 cup||original yogourt|
|1/2||lemon, zested and juiced|
|3||sprigs of flat leaf parsley, chopped, including stems|
|1||green onion, finely chopped|
|1/4 tsp||salt and black pepper|
|1/2||jalapeno, chopped finely|
Mix together the yogourt, lemon zest, juice, parsley, jalapeno, seasonings.
Toss with the fruit, chicken, onions and vegetables.
Arrange on a plate individually or family style on a platter.
