This is a yummy dish that is a bit like tacos, a bit like chili and a bit like nachos! It's sure to please even the pickiest eaters, my children love it. It can be served on a bed of rice, nacho chips or I imagine you could even serve it in taco shells.

Ingredients

6 boneless Maple Leaf chicken breasts
1 can black beans
rinsed and drained
1 can kernal corn
rinsed and drained
1 can spicy red pepper diced tomatoes
1 cup salsa
1 Pkg taco seasoning
null chopped veggies
null sour cream
null grated cheddar cheese
drizzle of canola oil

Directions

Defrost chicken breasts. Mix together, the salsa, diced tomatoes, chopped veggies (whatever you have on hand, I like to use bell peppers, mushrooms and onion), taco seasoning and canned veggies. Place chicken breasts in a large crock pot and cover with mixed ingredients. Leave it to cook for 4-6 hours on high. Before serving, shred chicken with forks. Serve on a bed of rice or nacho chips. Add a dollop of sour cream and a sprinkling of grated cheese and enjoy!
