|1/2 cup||(125 mL) Crumbled Feta cheese|
|Salt and pepper|
|2 tbsp||(30 mL) Olive oil|
|2||Medium tomatoes, diced|
|2 tbsp||(30 mL) Minced red onion|
|1 tbsp||(15 mL) Chopped black olives|
|2 tsp||(10 mL) Capers, roughly chopped|
|1 tbsp||(15 mL) Chopped parsley|
|2 tbsp||(30 mL) Diced orange or yellow pepper|
|2 tsp||(10 mL) Red wine vinegar|
PREHEAT oven to 350°F (180°C).
USING a sharp knife cut a slit in the side of each chicken breast to form a pocket. Stuff each pocket with Feta cheese and secure closed with a toothpick.
SEASON the chicken with salt and pepper. Heat oil in a large skillet over medium-high. Sear chicken on each side for 1-2 minutes or until golden brown. Transfer to an ovenproof baking dish and roast in the preheated oven for 18-20 minutes or until cooked through and the internal temperature reaches 165°F (74°C).
COMBINE all of the remaining ingredients in a small bowl. Season with salt and pepper to taste.
REMOVE chicken from the oven, remove toothpicks from the chicken and serve topped with the rustic salsa.
Serve with rice or noodles and a fresh garden salad.
