Italian inspired dish-- this moist chicken breast is topped with a zesty bunch of bruschetta mix.

2 tbsp | (30 mL) Crumbled Feta cheese |
10-12 | Leaves baby spinach |
Salt and pepper | |
2 tbsp | (30 mL) Olive oil |
1/4 cup | (60 mL) Ready prepared bruschetta |
PREHEAT oven to 375°F (190°C).
USING a sharp knife cut a slit in the side of each chicken breast to form a pocket. Stuff each pocket with half of the feta cheese and the spinach. Secure closed with a wooden toothpick. Season the chicken with salt and pepper.
HEAT oil in a skillet over medium-high. Add chicken and sear on each side for 1-2 minutes or until golden brown. Transfer to an ovenproof baking dish and bake in preheated oven for 18-20 minutes or until the internal temperature of the chicken reaches 165°F (74°C).
Remove toothpicks and serve each chicken breast topped with a heaping spoonful of bruschetta.
Serve with rice or noodles and a fresh salad.
