A delicious omelette brunch to make over the holidays.


1/4 cup diced Maple Leaf Country Kitchen Ham
1 small onion, dieced
2 mushrooms, sliced
2 large eggs
3 tbsp butter


Saute onions and mushrooms in a non stick pan with 1 tbsp. of butter for about 2 minutes until onions are translucent. Whisk eggs in a bowl, add onion and mushroom mixture into eggs and combine. Add 1 tbsp. butter into same frying pan on medium. Pour entire ingredients into pan and cook for 3 minutes until bottom is browned. Carefully, flip over in half and cook for 2 more minutes. Serve with toast and a side salad for a nice holiday brunch meal.
