About this Recipe

The key is to purchase a precooked roasted chicken from your favourite supermarket's deli section. A great use of leftover chicken to reinvent a new breakfast sandwich meal.


1 Dempster's Whole Grain English Muffin
4 slices of cooked roast chicken breast from a whole roast chicken purchased from supermarket
3 tbsp premade thick salsa sauce
1 thick slice of mozzarella cheese
2 cherry tomatoes for decoration (optional)


Slice chicken breast into 4 slices. Place the chicken on top of one half of muffin. Place cheese on top of other half and broil both halves for about 1-2 minutes until cheese has melted. Spoon salsa over melted cheese and some on top of the chicken. Decorate plate with cherry tomatoes. And there you have it - Fast Chicken Parmesan English Muffin!
