Ingredients

2 cups chickpea flour
1 tbsp sea salt
1 tsp black peper
1 tbsp italian seasoning
1 cup olive oil
1 cup water
1/2 cup sun dried tomatoes diced ino small pieces
1 cup mozzarella
1/2 lb minced maple leaf chicken or turkey
1/4 tbsp ground cumin
1/2 tbsp ground coriander seeds

Directions

1-mix chickpea flour with water,well until smooth mixture form, let stand for two hours
2- scoop all the bubbles that form to avoid gases
3- add salt, black pepper , Italian seasoning, and 1/3 of olive oil, and mix well
4- add one tbsp of olive oil to a skillet, and sauteed the ground chicken for 4-5 min
5- preheat oven to 375 degrees, and in 1 inch oven baking sheet pour the rest of olive oil, and heat in 375 degree oven for 5 min
6- take the baking sheet out of the oven and pour the mixture into it
7- bake on 375 degree for 20 min, until edges crisp, the take it out of the oven, spread the ground chicken, small diced sun dried tomatoes, and mozzarella cheese, sprinkle ground cumin, and coriander on top
8- return back to oven and bake for 7-8 min, or until cheese melt,
9- take out of the oven, let stand for 20-30 min and then cut into slices and enjoy
