This easy slow cooker recipe makes for a superb pork tenderloin that sure to become a family favorite!
|2 lbs||Lean Pork Tenderloin|
|1/2 Pkg||Maple Leaf Bacon (Don't use the thick sliced)|
|1||Red Onion, Thinly Sliced|
|1/4 cup||Balsamic Vinegar|
|2||Cloves of Garlic, Minced|
|1 tsp||Fresh Lemon Juice|
|1 tsp||Fresh Minced Parsley|
|1 tsp||Fresh Chopped Rosemary|
|1/2 tsp||Fresh Grated Ginger Root|
|1 tsp||Sea Salt|
Take your 1/2 pkg of Maple Leaf Bacon and put it into a shallow dish. Mix the Balsamic vinegar with the honey and pour over the bacon. Set aside. Combine the fresh herbs, spices and salt. Rub this mixture all over your pork tenderloin. Let sit for 20 minutes. Take your bacon and wrap it around the pork tenderloin, securing with toothpicks, if you wish. Spread the onion, garlic, lemon juice and the remainder of the marinade from the bacon over the pork tenderloin and bacon. Cover and set on low for approximately 7 hours or on high for 4 hours. Serve with herbed roasted potatoes and a salad. Enjoy!!
