A fun twist on an old favourite!

Ingredients

4 boiled eggs
1/4 cup baby spinach
1 finely chopped pimiento
1/3 cup light mayonnaise
2 whole wheat wraps
1/4 tsp salt
pepper to taste

Directions

Using a masher, mash eggs. Combine mayonnaise, salt, and pepper and stir until smooth. Mix in pimientos. Divide between two wraps, and cover with spinach. Roll them up and enjoy :)
