Delicious Egg Salad Sandwiches. Perfect for lunch, parties. Use fresh bread. Best served chilled.


8 slices Dempster's ZERO 100% Whole Grain Wheat bread
4 large Hard-boiled eggs
4 green onions, diced
4 tbsp mayonnaise
1/4 cup diced celery, optional
Salt and Pepper to taste


1- Mash the eggs with a fork.
2- In a medium bowl mix the eggs, green onions and mayonnaise. Add celery if using. Mix well. Add salt and pepper to taste.
3- Divide egg salad on 4 slices of bread. Top with the remaining 4 slices of bread.
4- Wrap well with saran wrap and place in refrigerator until ready to eat. You can add slices of cucumber and lettuce before serving.
