A healthy and protein packed sandwich featuring eggs florentine!
|3 tbsp||(45 mL) Mayonnaise|
|2 tsp||(10 mL) Dijon mustard|
|4||Slices Dempster’s WholeGrains® Ancient Grains Bread, lightly toasted|
|2||Slices Emmental or Jarlsberg cheese|
|3||Hard-boiled eggs, sliced|
|1/2 cup||(125 mL) Baby spinach|
|Salt and pepper|
MIX mayonnaise and mustard together in a small bowl. Spread mixture on one side of each slice of toast. Top two slices of toasted bread with cheese, egg slices, sliced tomato and spinach. Season with salt and pepper and top with remaining toast slices.
