Egg Salad and Bacon sandwich
2 | eggs hard boiled |
smashed | with fork |
3-4 | slices bacon cooked and chopped roughly |
2 | tablespoons mayo...or to taste |
salt | and pepper to taste |
3 | chopped green onions |
1 tbsp | chopped fresh parsley |
1 tbsp | butter or to desired amount |
1 | Chiabatta roll |
On | the side: baby carrots |
baby | tomatoes |
sliced | mini cucumbers |
red | pepper slices |
sprig | of parsley and an orange or desired fruit and a juice box |
Hard boil 2 eggs, let them cool, peel and smash with fork to desired texture
cook bacon, drain, and chop roughly, add to egg
chop green onion fairly fine, add to egg
chop parsley finely, add to egg
sprinkle with salt and pepper
add mayonnaise to egg and mix everything together
Slice Chiabatta bun and remove some of the excess bun in the top thereby making a little alcove to hold the egg.

spoon mixture onto one side of bun and top with other side
Serve with raw veggies and a juice box or water or beverage of choice along with fruit
Other options: whatever bread or bun you desire
chopped dill pickles
more mayo or less mayo
more bacon or less bacon (though I don't know why anyone would choose less)
