This egg and cheese flat-wrap travels well and is full of protein. Who said eggs are just for breakfast? I love to have eggs for lunch, to provide me with energy all afternoon! With a nice piece of fruit, you have all four food groups :)
|2||whole wheat wraps|
|1/3 cup||grated cheddar cheese|
|2 tbsp||diced onions|
|salt to taste|
|1 tsp||olive oil|
This fun lunch is easy to make:
Heat olive oil in a pan on medium-high. Add eggs and onions (and salt if desired) and cook for approximately 8-10minutes until cooked throughout, flipping once.
Transfer eggs to a plate.
Place one wrap in the frying pan and sprinkle with half of the cheese.
Place eggs on top of cheese.
Top eggs with remaining cheese, and second wrap.
Cook on medium-high for 2-3min per side.
