Roast chicken breasts with simple classic flavour is the perfect weeknight dinner. Lemony and fresh, this dish is a crowd pleaser.
|3 tbsp||(50 mL) Olive oil|
|4||Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts|
|Salt and pepper|
|8||Sprigs fresh thyme, roughly chopped|
|2 tbsp||(30 mL) Fresh lemon zest|
|1 cup||(250 mL) Dry white wine|
|1||Lemon, cut into wedges|
PREHEAT oven to 375°F (180°C).
HEAT oil in a large oven proof skillet over medium-high heat. Season chicken with salt and pepper. Brown chicken for about 3-4 minutes per side. Sprinkle chicken with thyme and lemon zest. Pour wine into the pan and add lemon wedges.
TRANSFER pan to oven and roast chicken for 30 minutes or until internal temperature reaches 165°F (74°C).
Serve with basmati rice and your favourite green vegetable.
