This is a great winter soup that that can be thrown together with whatever veggies you have in the fridge.
As with any soup, the quantity of spices can vary depending on personal preference.
This soup also freezes well.
|1 tsp||Veggie Oil|
|1 cup||Dried Orange Lentils|
|3 cups||Vegetable Broth (or chicken)|
|0.5 tsp||Yellow Curry|
The entire recipe can be cooked in one large pot.
Sautee the onion and carrots in the vegetable oil for 3-5 minutes until onions turn clear.
Add the vegetable broth, lentils, and spices.
Reduce heat to a simmer.
Cover and cook until lentils are soft (30-45 mins)
