This is a great starter recipe for someone new to cooking.


1 L red onion
1 cup chopped feta cheeze
1 L tomato, sliced thinly
1 cup black olives, chopped
2 tsp greek seasoning
1 L red pepper, sliced finely
2 tsp olive oil
1 Pkg chicken breast or drumsticks (4-6)
1/2 tsp salt
1/2 tsp pepper


Pre heat oven to 350 degrees.
Grease a 9x11 casserole with 1 tsp olive oil.
Slice onions, pepper, tomatoes and olives. Chop Feta cheese into small chunks.
Brush other tsp. of olive oil on chicken.
Season oiled chicken with greek seasoning (or a mix of oregano, basil), salt and pepper.
Then begin layering chicken with the various vegies. Onions then peppers then tomatoes. Sprinkle the cheese on top of this. Finally add the olives on top.

Bake uncovered for 30 minutes or until the chicken is fully cooked through.

Serve with rice, seasoned potatoes or your favourite side. Tastes great with Tzatziki too!
