I used leftover ham, but Canadian bacon, ground beef, or chicken would also work nicely.
|2||Dempsters dinner sized tortillas|
|1/2 cup||diced ham|
|1||small onion diced|
|2 tbsp||chopped sundried tomatos in oil|
|1/4 tsp||minced garlic|
|2 tbsp||tomato paste|
|1/4||red pepper in thin slices|
|6||grape tomatoes halved|
|4 oz||feta cubed|
|1/2 cup||shredded mozzarella|
sauté onions and sun dried tomatoes and garlic until onions are soft and clear. Place tortillas on a baking sheet and spread each with tomato paste. evenly spread out the ham and sprinkle with oregano and basil. spread out the onion mixture over the top and add the toppings, ending with the shredded mozzarella. Bake in oven at 425F for about 10 min (until cheese is melted).
