This recipe is easy to make and adds a little Tex-Mex flair to your lunch!
|8||Corn Tortilla Wraps|
|1 lb||lean ground beef|
|1 cup||long grain white rice, cooked|
|1||chopped red pepper|
|1 cup||shredded cheddar cheese|
|1||chopped white onion|
|hot sauce (optional)|
Prepare rice according to package directions.
In a large frying pan, cook beef, onions, and pepper until meat is no longer pink.
Add rice, salsa, and 1/3 cup cheddar cheese. Stir until well mixed and cheese is melted.
Spoon equal parts into wraps, and top with remaining cheddar.
Add your favorite hot sauce if desired.
Can also be made with ground chicken. Heat can be adjusted by using mild, medium, and hot salsa.
