Easy and Fresh Chickpea Salad

About this Recipe

This chickpea salad is very easy to make and uses fresh, complimentary ingredients for a great taste. The secret to making this taste so good? Mint leaves!

Ingredients

1 can (19 oz) chickpeas
2 tbsp olive oil
1/4 tsp salt
1/4 cup fresh mint leaves, finely chopped
2 green onions, chopped
grated zest of 1 lemon
OR
1 tbsp lemon juice
1/2 English cucumber, finely chopped
1/2 red pepper, finely chopped
1 clove garlic, minced

Directions

DRAIN AND RINSE chickpeas.

COMBINE all ingredients into a bowl and mix well.

Notes

Only stays good for about 1 week after making it.

Before serving, make sure to mix it well and garnish it all with the oil/lemon juice at the bottom for extra flavour.

I usually use about 3 or 4 tbsp of lemon juice because, frankly, I love lemon!
