This chickpea salad is very easy to make and uses fresh, complimentary ingredients for a great taste. The secret to making this taste so good? Mint leaves!
|1 can||(19 oz) chickpeas|
|2 tbsp||olive oil|
|1/4 cup||fresh mint leaves, finely chopped|
|2||green onions, chopped|
|grated zest of 1 lemon|
|1 tbsp||lemon juice|
|1/2||English cucumber, finely chopped|
|1/2||red pepper, finely chopped|
|1||clove garlic, minced|
DRAIN AND RINSE chickpeas.
COMBINE all ingredients into a bowl and mix well.
Only stays good for about 1 week after making it.
Before serving, make sure to mix it well and garnish it all with the oil/lemon juice at the bottom for extra flavour.
I usually use about 3 or 4 tbsp of lemon juice because, frankly, I love lemon!
