A delicious salad made trendy by being served in a mason jar.
|1 Pkg||Olivieri® Rainbow Tortellini|
|2/3 cup||(150 mL) Italian dressing|
|1||Red pepper, chopped|
|1||Yellow pepper, chopped|
|1/2||English cucumber, chopped|
|1 cup||(250 mL) Cherry tomatoes, chopped|
|4 cups||(1 L) Baby spinach|
|1 1/2 cups||(375 mL) Marinated artichokes, roughly chopped|
COOK tortellini according to the package directions. Drain and rinse under cold water.
USING four-1 litre mason jars, equally divide the dressing, red pepper, tortellini, yellow pepper, cucumber, tomato, spinach and artichokes between the jars, layering the salad as you go.
When you are ready to serve, place the lid on the jar and shake to dress the salad or pour the contents into a serving bowl and the salad will dress itself!
Great to make ahead and take for lunch or a picnic because the dressing is in the bottom of the jar and will not wilt the salad before serving.
