|2 tsp||(10 mL) Paprika|
|1 tsp||(5 mL) Cumin|
|2 tsp||(10 mL) Chili powder|
|1/2 tsp||(2 mL) Dried oregano|
|1/2 tsp||(2 mL) Ground coriander|
|1/4 tsp||(1 mL) Cayenne|
|Salt and pepper|
|2 tsp||(10 mL) Cornstarch|
|DOUBLE DECKER TURKEY TACOS:|
|10||Hard taco shells|
|2 tbsp||(30 mL) Olive oil|
|1 Pkg||Maple Leaf Prime Naturally® Extra Lean Ground Turkey|
|1||Small onion, diced|
|2||Cloves garlic, minced|
|3/4 cup||(175 mL) Chicken broth or water|
|2 tsp||(10 mL) Lime juice|
|1||(14 oz/398 mL) Can refried beans|
|10||Dempster’s® Original Small Tortillas|
|1 cup||(250 mL) Shredded lettuce|
|1 cup||(250 mL) Diced tomatoes|
|1/2 cup||(125 mL) Shredded Cheddar cheese|
|1/2 cup||(125 mL) Sour cream|
|1 cup||(250 mL) Salsa|
COMBINE ingredients for taco seasoning and set aside.
HEAT taco shells according to package directions. Wrap tortillas in foil and place in the oven to warm.
HEAT oil in a large skillet over medium-high heat. Add turkey and cook 8 to 10 minutes, breaking up with the back of a wooden spoon. Add onion and garlic. Cook, stirring occasionally until onions are soft. Add taco-seasoning mix and stir to coat turkey. Add chicken broth and lime juice. Bring to a boil, reduce heat and simmer for 2-3 minutes or until thickened. Remove from heat and set aside. Heat refried beans.
ASSEMBLE tacos by spooning seasoned meat mixture into hard taco shells and topping with lettuce, tomatoes, cheese, sour cream and salsa. Spread tortillas with heated refried beans and wrap around the outside of the filled taco shell to create a double decker taco.
