2 tsp (10 mL) Cumin
2 tsp (10 mL) Dried oregano
2 tsp (10 mL) Chili powder
.25 tsp (1 mL) Cayenne pepper
.25 tsp (1 mL) Each salt and pepper
1 lb (454 g) Lean ground beef
1 Onion, chopped
1 Red pepper, chopped
1 Jalapeno pepper, minced
2 Cloves of garlic, minced
.5 Spice blend
1 cup (250 mL) Drained canned kidney beans
1 Large tomato, chopped
.5 cup (125 mL) Chicken stock
1 (16 oz/425 g) Can refried beans
6 Dempster’s® Original Small Tortillas
1 cup (250 mL) Grated Cheddar cheese
1 cup (250 mL) Shredded iceberg lettuce


MIX together all spice blend ingredients, divide in half and set aside.

HEAT a large pan over medium-high heat, add ground beef and cook for 8-10 minutes breaking up the ground beef with the back of a wooden spoon.

ADD onions, red pepper, jalapeno, garlic and 1/2 of the spice blend, cook for 2-5 minutes. Stir in kidney beans, tomatoes and chicken stock, reduce heat and simmer for 15-20 minutes.

HEAT refried beans in a pan over medium heat. Stir in the remaining ½ of the spice blend.

SPREAD refried bean mixture in the center of each tortilla. Top with ground beef mixture, cheese and lettuce.
