Crispy and juicy, this authentic style fried chicken is packed with bright flavour from citrus and soy.
|1 Pkg||Maple Leaf Prime Naturally® Chicken Thighs|
|1 Pkg||Maple Leaf Prime Naturally® Chicken Drumsticks|
|1 cup||(250 mL) Lime juice|
|4 tbsp||(60 mL) Soy sauce|
|4 tbsp||(30 mL) Worcestershire sauce|
|4||Cloves garlic, minced|
|2 cups||(500 mL) All-purpose flour|
|2 tsp||(10 mL) Smoked paprika|
|Salt and pepper|
|3||Green plantains, peeled and sliced to 1/8-inch (3 mm) thick|
PLACE chicken in a large re-sealable plastic bag or container.
COMBINE lime juice, soy sauce, Worcestershire and garlic in a small bowl. Pour marinade over chicken. Refrigerate for 4 hours or overnight.
PREHEAT deep fry oil to 375˚F (190˚C).
COMBINE flour, smoked paprika, salt and pepper in a shallow dish. Dredge chicken pieces in flour shaking off any excess. Working in batches, deep fry chicken until golden brown, about 8-10 minutes and internal temperature reaches 185˚F (85˚C). Place chicken on a paper towel lined baking sheet to drain.
WORKING in batches, fry plantain slices about 3-4 minutes or until golden and crisp.
