Keep your eggs together with Dempster’s® Soft Corn Tortillas


1 tbsp (15 mL) Butter
4 Eggs
.25 cup (60 mL) Grated Cheddar cheese
.25 cup (60 mL) Grated Pepperjack cheese
2 Dempster’s® Soft Corn Tortillas
.25 cup (60 mL) Refried beans, warmed
4 Slices Schneiders® Country Naturals® Smoked Ham
.25 cup (60 mL) Green salsa, warmed
.25 cup (60 mL) Red salsa, warmed


HEAT butter in a large non-stick skillet over medium-low heat. Add eggs, cover and cook for 3-4 minutes or until whites are set and yolks are still runny. Sprinkle 2 eggs with Cheddar cheese and 2 with Pepperjack cheese. Cover and cook for another 30 seconds or until cheese has melted.

SPREAD each tortilla evenly with refried beans. Top with two slices of ham. Lay a Cheddar-topped egg on half of each tortilla and a Pepperjack-topped egg on the other half. Drizzle red salsa on the Cheddar egg and green salsa on the Pepperjack egg. Serve immediately.
