PREHEAT oven to 375°F (190°C).
COMBINE mustard and mayonnaise in a shallow bowl. Place crushed chips in a separate shallow bowl. Dip each chicken breast, first into the mayonnaise mixture, then coat with crushed potato chips.
ARRANGE on a baking sheet and roast for 20-25 minutes or until the internal temperature reaches 165°F (74°C).
