Demi-Baguette "Club" Sandwich

A slight twist on the traditional club sandwich, made with a demi-baguette or you can use a full baguette.


2 demi-baguettes
150 g Maple Leaf Prime Chicken breasts, cooked
4 tbsp mayonnaise
2 tbsp grainy ancient recipe mustard
1 tomato thinly sliced
fresh ground pepper
6 strips of cooked bacon


Grill or cook chicken breasts and slice. Slice tomato.

Slice baguettes into three lengthwise. For each baguette, spread 1 tbsp mayo onto bottom slice. Layer tomato and lettuce. Add a little fresh ground pepper. Spread 1 tbsp mayo onto middle slice, turn over and place onto tomato and lettuce layer. On top of middle layer spread a half tbsp mustard followed by a layer of chicken and 3 strips of bacon. Spread a half tbsp mustard on to layer and mate with the rest of the sandwich.

To serve, evenly space skewers or cocktail picks and cut into 4 with a skewer or pick holding each section together. Serve with fries or potato chips and some cole slaw.
