The addition of blueberries brings summer freshness to a family favourite recipe. The use of Dempsters WholeGrains Canadian Century Grains bread provides an authentic, rustic, and nutty flavour which perfectly compliments the tangy sweetness of the blueberries. Bake in muffin cups to make your bread pudding mobile and ready to join your picnic.


4 cups Dempster's® WholeGrains bread, cut into cubes
2 cups Fresh Blueberries
4 Eggs
1 1/2 cups Brown Sugar
2 cups Milk, or milk substitute product
1 tsp Vanilla Extract
1 tsp Cinnamon
1/4 tsp Salt
1 tbsp Powdered Sugar


Preheat oven to 350 degrees.

In a large bowl, gently mix bread cubes and 1 1/2 cups of the blueberries. (Reserve 1/2 cup of blueberries for pressing into the tops of the bread pudding)

In a medium bowl mix eggs, milk, brown sugar, vanilla extract, cinnamon and salt. Pour mixture into bowl containing bread and blueberries. Let sit for 10 minutes or until all liquid is absorbed.

Line muffin tins with paper muffin cups. Fill each cup with bread pudding mixture. Press remaining blueberries into top of bread pudding.

Bake in oven for 20 minutes, or until bread pudding is golden brown. (Test by pressing your finger into top of bread pudding. It should spring back when pressed).

Remove from oven and sprinkle powdered sugar on top when bread pudding has cooled slightly.


The WholeGrains Blueberry Bread Pudding is delicious and dressed up when topped with low-fat frozen vanilla yogurt or ice cream.
