This delicious middle eastern style skillet is fragrant and delicious. Simple to make but tastes like you slaved all day!
|1||lbs Maple Leaf Prime® Ground Turkey|
|2 tbsp||(30 mL) olive oil|
|3 tbsp||(45 mL) curry powder|
|1 1/2 tsp||(7.5 mL) turmeric|
|1 tbsp||(15 mL) garlic, minced|
|1 cup||(250 mL) chickpeas, drained and rinsed|
|1 cup||(250 mL) arugula|
|Juice of two limes|
|1/2 cup||(125 mL) dates, pitted and chopped|
HEAT oil in a large skillet over medium high heat.
BREAKING apart with the back of a wooden spoon cook turkey until browned about 6 to 8 minutes.
ADD curry and turmeric and cook stirring often for about two minutes.
ADD garlic and arugula and cook 1 minute longer or until arugula has just wilted.
ADD lime juice and chickpeas and stir well to combine.
GARNISH with dates.
Serve with naan or flat bread.
