nourishing curry to warm you up on a cold day


1 lb Maple Leaf Prime boneless skinless chicken breasts cut into cubes
2 tbsp coconut oil or olive oil
1 cup chopped onion
1 tbsp chopped garlic
2 tbsp thai red curry paste
1 can coconut milk
1 tbsp fish sauce
1 tsp brown sugar
1 tsp lemon juice
2 cups chopped mixed vegetables


Saute onion and garlic in oil. Add chicken pieces and brown. Add thai red curry paste and cook 2 minutes while stirring on medium heat. Add remaining ingredients: coconut milk, fish sauce, brown sugar, lemon juice and your choice of mixed vegetables (I used carrots, broccoli, peas, tomatoes and corn)
Let simmer for 20 minutes until chicken is cooked and vegetables are tender.
