This Indian-inspired Curried Chicken Salad Sandwich is bursting with flavour!
|1.5 cups||(375 mL) Natural Selections® Oven Roasted Chicken Strips, coarsely chopped|
|2||Stalks celery, diced|
|2||Green onions, diced|
|2 tbsp||(30 mL) Golden raisins|
|3 tbsp||(45 mL) Mayonnaise|
|1 tbsp||(15 mL) White wine, optional|
|2 tbsp||(30 mL) Ready prepared mango chutney|
|1 ½ tbsp||(22 mL) Curry powder|
|2 cups||(500 mL) Lightly packed arugula|
|1||Small jar roasted red peppers, drained|
|1||Multigrain baguette, split lengthwise|
PLACE chicken, celery, green onions and raisins in a bowl.
WHISK together mayonnaise, white wine, chutney and curry powder in a separate bowl. Pour dressing over the chicken mixture and gently stir to combine.
CUT the split baguette in three equal pieces. Top the bottom of each with arugula, followed by red pepper strips and a heap of chicken salad mixture. Cover with top of baguette and serve immediately.
