2 Maple Leaf Prime Boneless Skinless chicken breast, cooked and diced
3/4 cup mayonnaise
1 1/2 tsp mild curry powder
1/3 cup dried blueberries
2 tbsp chives, chopped
10 large wonton wrappers
cooking spray
1/4 cup cilantro, chopped


Preheat oven to 375 degrees. Lightly coat a large muffin tin with cooking spray. Gently press wonton wrappers into each muffin depression and flute the edges up. Spray wonton wrapping with cooking spray. Bake in over for 8 to 10 minutes checking often. If browning to quickly tent with foil.

Remove from oven, allow to cool slightly and remove wonton cups to cooling rack and set aside.

In a large bowl combine chicken, blueberries, curry powder, and chives. Mix well to incorporate. Season with salt and pepper. Gently fill each cup with chicken salad and garnish with cilantro.
