With flaky tuna, sweet chunks of cranberry and the crunch of carrot, this easy to make sandwich is a great option for lunch.
|2||slices of bread, Dempster's (Double my fibre) or (Procardio)|
|1||(90g/3 oz) Can tuna|
|.25 cup||(60 mL) Finely diced carrot|
|1||Green onion, chopped|
|2 tbsp||(30 mL) Dried cranberries|
|1 tbsp||(15 mL) Mayonnaise|
|1/5 English cucumber, peeled and sliced lengthwise|
MIX together tuna, carrots, chives, green onions, cranberries and mayonnaise.
PLACE cucumber on one slice of bread, season with salt.
TOP cucumbers with tuna mixture and remaining slice of bread to form a sandwich.
