Slow cooked Cuban style pulled pork is easy to make and delicious, give it a try and you won't be disappointed.
|.5 cup||(125 mL) Lime juice|
|1.5 tbsp||(22 mL) Canola oil|
|10||cloves garlic, minced and divided|
|.5 tsp||(2 mL) White vinegar|
|.25 tsp||(1 mL) Salt|
|1||Maple Leaf Prime® Shoulder Pork Roast for Pulled Pork|
|1 tbsp||(15 mL) Cumin|
|Salt and pepper|
|2||Limes, juiced and zested|
|2||Oranges, juiced and zested|
|1||Bottle (12 oz) Beer or water|
WHISK together lime juice, canola oil, half the garlic, salt and vinegar. Refrigerate until ready to use.
PREHEAT oven to 325°F (160°C).
PLACE the pork shoulder roast in a small roasting pan. Season with cumin, salt and pepper. Whisk the juice of the lime, zest, juice of the orange, zest, the remaining garlic and bottle of beer. Pour around the roast and cover the pan. Roast for 3-4 hours or until very tender and the meat is falling apart. Remove from the oven and shred using two forks. Add the refrigerated mojo sauce a little at a time until evenly combined.
Serving suggestions: Serve with plantain chips and pickle spears or warmed rolls with thinly slice onions or pickles.
