Fresh crunchy vegetables with salty sweet crabmeat and creamy arugula mayonnaise.


2 cups Arugala
6 tbsp Mayonnaise
1 tbsp Lemon juice
1 tsp Salt
1/4 tsp Pepper
8 Slices Dempster’s® 100% Whole Wheat
1/2 Cucumber, sliced
2 cups Shredded crab meat
1/2 cup Carrots, juilienned
1/3 cup Radishes, julienned
1/4 cup Diced red pepper


PLACE arugula, mayonnaise, lemon juice, salt and pepper in food processor and pulse until combined.

ASSEMBLE the sandwich by placing cucumber slices on four of the slices of bread. Top with crabmeat, carrots, radishes, pepper and arugula mayonnaise. Add the second slice of bread and serve.
