This goes well with other meat as well such as pork, or beef.
|2||maple leaf prime chicken breasts|
|1 cup||potato starch|
|2||large king oyster mushrooms|
|1/2 tsp||garlic powder|
|null||oil for frying|
In a bowl mix together the potato starch and 2 cups of water. Set aside for an hour or two. Soak the shitake mushrooms in warm water for 30-60 mins to re-hydrate them. Drain and remove stems and cut them in half if small, and quarters if larger. Squeeze out excess liquid with a paper towel.
Slice the king oyster mushrooms into 1/2 inch thick strips, then cut in half. Slice the chicken into 1/2 inch thick bite size pieces. Heat oil on medium high heat in a large pot. The starch should have separated from the water, drain the water and mix in egg white. Once combined add in spices, mix well. Add chicken and mushrooms to the starch and mix so that everything is coated. Fry in batches for 5-7 mins until golden brown and drain on paper towels. serve with sweet and sour sauce or pineapple sauce.
