I set out to create a recipe using Dempsters Apple Pie Bagels that would please my whole family and create a fun Fall-themed dessert for our Thanksgiving luncheon. After a lot of thought I decided to make a variation on something we all love, cake pops! I was so happy with this recipe and so was my family - the pops reminded us all of the crunchy caramel apples from our local Fall fair but we could also taste the flavours of apple pie in these sweet little treats. Makes 8-10 cake pops.

Ingredients

1 Pkg Dempsters Apple Pie Bagels
1/2 can cream cheese frosting
1/4 cup dulce de leche or caramel sauce
2 cup white chocolate candy wafers (for melting)
1/2 cup toffee bits
1 Pkg lollipop or candy sticks (can be found in arts and crafts stores)

Directions

Step 1. You will only need 2 Dempsters Apple Pie Bagels for this recipe. Chop the 2 bagels into small chunks and transfer into a food processor. Pulse in food processor until bagels have broken down into a powdery consistency. Transfer crushed bagels to a medium sized glass bowl. If there are a few small chunks of bagel remaining, crush them up with your fingers.

Step 2. Add cream cheese frosting and caramel sauce to the crushed bagels. Using your fingers, mix the frosting and caramel sauce into the crushed bagels until fully mixed. With both hands, shape the mixture into 8-10 balls (or more if you want smaller cake pops) and place on a plate. If the mixture won’t hold together you may need to add a little more frosting or caramel sauce. Insert a candy stick into each ball.

Step 3. Place plate with cake pops into freezer and freeze for 20 minutes.

Step 4. Place the toffee bits in a small bowl or plate.

Step 5. Next, place one cup of the white chocolate wafers in a microwave safe bowl. To melt the wafers, microwave them for 30 seconds, remove the bowl from the microwave and stir. You will likely need to repeat this step 2-3 times in order to get the chocolate to a smooth, thin consistency. Note: These wafers retain their shape in the microwave and only break down when stirred.

Step 6. Once your melted chocolate is ready, remove the cake pops from the freezer. Take one cake pop and immediately use a spoon to pour the melted white chocolate all over the cake pop until it is evenly covered. Immediately hold the cake pop over the plate of the toffee bits and sprinkle them all over the cake pop, then place onto a clean plate. You need to do this quickly before the chocolate sets.

Step 7. Repeat the above steps with the remaining cake pops. Remelt the chocolate as needed by putting it back in the microwave for 10 seconds. You will likely need to melt the second cup of white chocolate wafers to finish decorating all of the pops. Once all of the cake pops are ready, place the plate of pops back in the freezer for 5-10 minutes so that they can harden completely.

Serve the cake pops directly from the freezer for a cold, sweet, crunchy caramel apple pie treat! Your family will love them!

Notes

Enjoy either straight from the freezer or cold from the fridge! Yum!
