Chicken, black beans, rice and southwest spices combine to make a tasty wrap.


2 Dempster's Original Tortillas
1 Maple Leaf Prime Naturally� Portions Chicken Breast
cooked and shredded
1/2 cup Cooked rice
warm or at room temperature
1/2 cup Black beans
1/2 Green pepper
finely chopped
2 tbsp Lime juice
1 tsp Chili powder
1/2 tsp Ground cumin
1 cup Sharp cheddar cheese
1 cup Sour cream (optional)


Mix rice with chili powder and cumin. Add remaining ingredients except for cheese and sour cream..Sprinkle cheese over tortillas, leaving 1/2-inch border around edges, then arrange chicken and rice mixture down the center of each tortilla.

Roll stuffed tortillas, leaving edges open and slightly flatten the wraps with the palm of your hand. Spray seam-side of the wrap lightly with cooking spray.

Heat a large non-stick skillet over medium heat for 1 minute. Arrange wraps, seam-side down, in pan and cook until golden brown and crisp, flip them over and cook, about 2-3 minutes per side.

Transfer to a plate and serve warm with sour cream.
