Succulent tender chicken is stuffed with ricotta and swiss chard. A healthy low call dinner that is a showstopper for family and friends, easy and affordable.
A fun way to get everyone to eat more veggies
6 | Maple Leaf Prime Thinly sliced Chicken Breast |
1 cup | ricotta, low fat |
1/2 cup | boiled, chopped, drained swiss chard |
1 tsp | each salt and pepper |
1/4 cup | minced red pepper |
1 1/2 cup | seasoned bread crumbs |
1 tbsp | parmesan cheese |
2 | egg whites |
1 tbsp | water |
2 tbsp | vegetable oil |
Mix the ricotta, swiss chard, pepper, salt and pepper together in a bowl.
Mix the breadcrumbs, parmesan together and place on a large piece of wax paper.
Whisk the egg whites and water in a pie plate.
Place a large dollop of filling onto the pointy end of a chicken breast. Begin to roll away from you.
Dip it into the egg wash then roll and press into breadcrumbs.
Grease a baking sheet with the oil.
Place seam side down on baking sheet.
Continue to fill and bread remaining chicken breasts.
Bake in a preheated 350F for 30-40 min or until juices run clear when pierced with a knife.
