A fun way to get everyone to eat more veggies
|6||Maple Leaf Prime Thinly sliced Chicken Breast|
|1 cup||ricotta, low fat|
|1/2 cup||boiled, chopped, drained swiss chard|
|1 tsp||each salt and pepper|
|1/4 cup||minced red pepper|
|1 1/2 cup||seasoned bread crumbs|
|1 tbsp||parmesan cheese|
|2 tbsp||vegetable oil|
Mix the ricotta, swiss chard, pepper, salt and pepper together in a bowl.
Mix the breadcrumbs, parmesan together and place on a large piece of wax paper.
Whisk the egg whites and water in a pie plate.
Place a large dollop of filling onto the pointy end of a chicken breast. Begin to roll away from you.
Dip it into the egg wash then roll and press into breadcrumbs.
Grease a baking sheet with the oil.
Place seam side down on baking sheet.
Continue to fill and bread remaining chicken breasts.
Bake in a preheated 350F for 30-40 min or until juices run clear when pierced with a knife.
