This quick and healthy Creole inspired braised chicken can be prepared in 30 minutes.
|2 tbsp||(30 mL) Olive oil, divided|
|4||Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts|
|1 tbsp||(15 mL) Cajun spice, divided|
|1||Large onion, diced|
|2||Cloves garlic, minced|
|1||Yellow pepper, chopped|
|1||Stalk celery, diced|
|1 tbsp||(15 mL) Tomato paste|
|1||(14 oz/398 mL) Can crushed tomatoes|
|1 cup||(250 mL) Low sodium chicken broth|
|1||Sprig fresh thyme|
|Salt and pepper|
|2 tbsp||(30 mL) Chopped fresh parsley|
HEAT 1 tbsp (15 mL) oil in a large pot over medium-high. Season chicken with 1 tsp (5 mL) Cajun spice. Cook chicken for 2-3 minutes per side or until golden brown. Remove from pan and set aside.
REDUCE heat to medium. Add remaining oil to the same pot. Add onions, garlic, peppers, celery and carrots. Cook 3-4 minutes or until soft. Add tomato paste and remaining Cajun spice. Cook an additional 1 minute, stirring constantly. Add tomatoes, broth, thyme, bay leaf, sugar, salt and pepper. Place chicken back into the pan, bring to a boil. Reduce heat and simmer for 15-20 minutes or until the internal temperature of the chicken has reached 165 ̊F (74 ̊C).
Sprinkle with fresh parsley before serving.
Serve over rice or quinoa.
