A fast family favourite. Juicy bits of sausage meat and brilliant red pepper tossed in a light creamy sauce with a spicy kick of chili flakes.


2 tbsp (30 mL) Olive oil
1/2 Onion, diced
3 Cloves garlic, minced
1 (500g) Maple Leaf® Sausage Meat
3 tbsp (45 mL) Flour
3 cups (750 mL) Milk
1 Red pepper, diced
1-2 tsp (5-10 mL) Chili flakes
Salt and pepper
1 (350 g) Package Olivieri® Linguini
Chopped fresh parsley or basil to garnish


HEAT olive oil in a large skillet over medium. Add onions and garlic. Sauté 1 minute or until fragrant. Add sausage meat and stir, breaking up the meat with a wooden spoon. Cook 10-12 minutes or until golden brown.

SPRINKLE meat mixture with flour and cook, stirring constantly for 2 minutes. Slowly pour in milk, stirring until smooth. Add red pepper, chil flakes, salt and pepper. Bring to a boil, reduce heat and simmer for 10 minutes. If sauce is too thick, thin it out with a little more milk.

COOK linguini according to package instructions. Drain and add to the pan with the sauce. Toss to coat. Divide pasta between serving plates, top with remaining sauce and garnish with chopped herbs.


Serve with Caesar salad and Dempster’s® Ovenfresh™ Baguette for a delicious Italian meal.
