1 tbsp (15 mL) Olive oil
1 tbsp (15 mL) Butter
1 Small onion, finely diced
2 Cloves garlic, minced
2 cups (500 mL) Diced Schneiders® Olde Fashioned Fully Cooked Smoked Ham
1/3 cup (80 mL) Flour
3 cups (750 mL) Reduced sodium chicken broth
3 cups (750 mL) Chopped fresh broccoli
1 Large carrot, grated
1/4 tsp (1 mL) Nutmeg
2 1/2 cups (625 mL) Milk
1/2 cup (125 mL) Half and half cream (10%)
2 cups (500 mL) Grated Cheddar cheese
1 tsp (5 mL) Chopped fresh thyme (optional)
Salt and pepper


HEAT oil and butter in a large pot over medium. Add onion and garlic; sauté for 5-6 minutes or until the onions are soft and garlic is fragrant. Add ham and continue to cook for 2-3 minutes stirring occasionally. Sprinkle with flour and stir constantly for 1-2 minutes. Whisk in broth and bring to a boil. Add broccoli and carrot; return to a boil. Reduce heat and simmer 3-5 minutes or until the broccoli is fork tender. Add nutmeg along with milk and half and half cream, return to a simmer for 2-3 minutes. Remove soup from the heat and stir in cheese and thyme if using. Season to taste with salt and pepper. Serve hot with a side salad and crusty bread.
